Founded in 1963 in Osaka, Japan, Ganko Sushi began as a humble 15-square-meter eatery in Juso, established by Atsushi Kojima. The name “Ganko,” meaning stubborn, reflects an unwavering dedication to quality, authenticity, and traditional washoku (Japanese cuisine).
Over the past 60 years, this steadfast commitment has guided Ganko’s growth from a single neighborhood sushi shop into a renowned Japanese dining institution, with over 100 outlets across Japan and Hong Kong. Today, Ganko Sushi is celebrated worldwide by sushi and omakase lovers, trusted for preserving time-honoured techniques while delivering consistently exceptional Japanese cuisine.
